Tenderizing The Meat
Sea creatures often have tender yet firm flesh. They have to be tenderized so that the firmness of the meat is not felt while eating. For calamari, the squid rings are soaked in salted milk and a refridgerator for 30 minutes. This also helps with the fishy smell. If you have coatings over the squid, then the freezing helps it stick to the meat.
Frying Them
Calamaris are deep-fried rings of squid. Whereas breaded calamari is the same but the rings are coated with crunchy bread crumbs. After freezing them for about 30 minutes to tenderize the rings, the frozen squid can be immediately fried in an adequate amount of oil. make sure it turns golden brown before taking it out. If the colour is slightly darker, then the rings are burnt.
